Bourbon Old Fashion Ice Cream


This adult dessert is the perfect balance of alcoholic and sweet. It's full of Bourbon, orange bitters, and chopped up maraschino cherries. The recipe uses a classic egg custard as the base. After mixing all the ingredients the custard should be thick enough to coat the back of a spoon and draw a clean line across the spoon like the picture below.

Once the custard is done, add in the flavors by putting in a couple tablespoons bourbon with orange bitters. Regular bitters will work too.

Once the flavors are whisked in it's time to cool the batter until it's cold. Pour into an ice cream maker and churn.

Once it's done, pour in the chopped up cherries and mix until thoroughly distributed. If you want the ice cream to be a little sweeter or fruitier then add in some of the maraschino syrup.

Recipe

Makes: 1 pint ice cream                                   Time: 20 minutes + freezing


Ingredients

  • 6 egg yolks

  • 3/4 cup sugar

  • 2 cups heavy cream

  • 1 cup whole milk

  • 5 tablespoons bourbon

  • 2 Dash Orange Angostura bitters

  • 1/2 teaspoon kosher salt

  • 12 Maraschino cherries, chopped

Directions

  1. Whisk together egg yolks and sugar in a medium saucepan. Slowly whisk in cream, then milk. Once fully incorporated, turn the stove on and set to medium heat. Continue to whisk until a custard forms. It's done when you can coat the back of a spoon with custard and make a clean line through it with a finger. 

  2. Remove from heat and pour base through a strainer into an airtight container. Stir in bourbon, orange bitters, and salt. Cover and rest in refrigerator overnight.

  3. Once it's cool, churn in an ice cream maker according to manufacturer's instructions. Once the ice cream is thick and creamy pour the cherries into the mixture until combined. 

  4. Serve immediately as soft serve or transfer to freezer for at least three hours to harden.
