Baklava Puff Pastry Cookies

I was inspired to make these after finding a simple sugar cookie recipe with a baklava filling. I loved the idea, but wanted it to include the puff pastry. My approach was to make a simple cookie dough and a baklava filling, then layer them on top of puff pastry.
First, to make the baklava mixture, I combined butter, powdered sugar and honey and brought it to a boil. The resulting mixture was thick, like molasses. After the mixture cooled, I added the walnuts.
To make the cookie dough, mix all the ingredients together. The dough will be moist and thin.

Next, take the puff pastry dough and cut it into 2 1/2 inch circles and place one in each well. Fill each well half way with the cookie dough mixture and the rest of the way with the baklava filling. When you first put them into the over they'll look like this.

After about 18 minutes of baking at 400 F they end up looking like this.

After a few minutes you can pop these out, it's surprisingly easy!

Puff pastry bonus snack
If you're like me, you won't want to waste the extra puff pastry dough. Instead bake it for a light snack! You can brush melted butter and sprinkle cinnamon sugar on each piece of dough then bake for 15 minutes.

Recipe
Makes: 24-36 cookie puffs Time: 40 minutes
Ingredients
1 cup butter (3/4 cup melted and cooled)
1/2 cup powdered sugar
3 tbsp honey
3/4 cup walnuts, finely chopped
1 package (2 sheets) Puff Pastry, thawed
2 eggs
1 cup flour
1/2 sugar
1/2 light brown sugar
Directions
Preheat oven to 400 F.
To make the baklava filling, melt 1/4 cup butter with the powdered sugar and honey. Bring to a boil and set aside. Once cooled, mix in the walnuts.
To make the dough, beat the eggs in a electric mixer on high for 3 minutes, until bubbles start to form. Add in the flour and sugars. Once combined add in the cooled butter. The batter will be very thin, but as the butter solidifies it'll thicken.
Grease 2-3 mini muffin trays. Use a 2.5 inch round cookie cutter to cut out circles of puff pastry. Place one in each of the wells in the muffin trays. Take a fork and puncture a few holes in the base of the pastry. Fill the bottom half of each well with cookie dough, and the top half with the baklava mix.
Bake for 18 minutes, or until the pastry is golden brown. Let cool for 5 minutes and remove from the tin (they'll pop right out).
