Candied Ginger Chocolate Cookie


My inspiration for this cookie came when I wanted to create a ginger cookie that was different than a classic ginger snap. 

These cookies are very chocolaty but have a nice kick when you eat the candied ginger. You can either buy the candied ginger or make it yourself. To make it yourself, you just need to boil ginger slices with sugar and water. After 45 minutes the ginger slices will be tender, and the liquid is a great ginger simple syrup.

After the ginger is laid out on a wire rack let it cool then coat each piece in sugar.

They'll dry out on parchment paper and are absolutely amazing! They're sweet and flavorful and pair perfectly with chocolate cookies.

These dough balls contain chopped candied ginger as well as the ginger simple syrup to balance out the chocolatey flavor. If you're a huge ginger fan like me, then you'll just want even more of that ginger flavor! I like to roll the dough balls in chopped up candied ginger. This makes it so every bite has a strong ginger flavor.

If you'd rather go light on the ginger, then you can always place a single piece of candied ginger on top to show off the ginger.


 

Recipe

Makes: 18 cookies                    Time: 30 minutes + 1.5 hours waiting


Ingredients

Candied Ginger:

  • 1 cup fresh ginger sliced

  • 3 cups white sugar

  • 3 cups water

Cookies:

  • 1/2 cup butter, softened

  • 1/2 cup white sugar

  • 1/4 cup packed brown sugar

  • 1 egg

  • 1 tsp vanilla

  • 3 tbsp ginger syrup

  • 1 cup flour

  • 1/3 cup cocoa powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt​

  • 1 cup chocolate chips

  • 1/3 cup candied ginger, chopped

Directions

Candied ginger:

  1. To make the candied ginger, peel and slice the ginger. Either cut 1/8 inch slices or use a slicer to get crispier ginger slices.

  2. Mix all the ingredients in a medium pot. Bring to a boil and let simmer for 45 minutes or until the ginger is sweet and tender and the mixture has thickened. 

  3. Strain out the ginger and lay out all the ginger slices on a wire rack. Cool and transfer the syrup to a container to use for other recipes.

  4. Once the ginger slices have cooled, coat each piece in granulated sugar and let dry on wax paper.

Cookies:

  1. Preheat over to 350 F.

  2. Beat the butter, white sugar, brown sugar, egg, vanilla, and ginger syrup in a mixer. Once combined add in the cocoa powder, baking soda, salt and flour.

  3. Mix in the chocolate chips and the chopped candied ginger.

  4. Make 1 tbsp sized cookie balls* and place on a baking sheet lined with a silpat or parchment paper. 

  5. Bake for 9 minutes and allow to cool for 5 minutes on the baking sheet. Top each cookie with a piece of candied ginger if desired. 

*If you're looking for a stronger ginger flavor, cool the dough in the fridge for 30 minutes then ball the dough and roll it in the chopped candied ginger
