Chai Snickerdoodle Bars

These chai snickerdoodle bars are sugary and soft with a gooey center.

The dough is a classic snickerdoodle batter filled with chai marshmallows and chocolate chips.

Once the dough is done, the assembly can begin. First take half the dough and chill it. Then take parchment paper and place cover all sides of an 8 by 8 pan. Take half of the dough and spread it across the parchment paper in one thin layer then pour cinnamon sugar over the entire thing. Layer marshmallows and chocolate chips across the entire surface of the dough.

Once assembled it'll look something like this. Don't worry if you don't have a pan like mine, any 8 by 8 pan will work fine. I chose to use this brownie edge pan because it allows my cookie dough to cook more evenly. With an 8 by 8 pan you may have a crispy edge and a soft middle, but with this pan it'll be a more consistent bake.
These bars take at least 30 minutes to bake all the way through.
Once cooked let cool and then remove the entire thing by lifting the parchment paper.

Recipe
Makes: 12 bars Time: 40 minutes + chilling
Ingredients
2 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/3 cup brown sugar
1/2 cup granulated sugar
1 egg
1/3 cup milk
1/2 teaspoon vanilla
1/4 cup granulated sugar
2 teaspoons cinnamon
1 cup chocolate chips
1 cup mini chai marshmallows
Directions
Preheat oven to 350 F.
Line an 8×8-inch square baking dish with parchment paper
Beat the butter with the paddle attachment add the brown sugar and 1/2 cup granulated sugar and mix until smooth. Add the egg, milk and vanilla and beat until just combined.
Place the mixer on low and add the flour, cream of tartar, baking soda, and salt.
Take half the batter and spread it across the base of the pan. Refrigerate the other half of the dough for 1 hour or freeze for 20 minutes to make the dough easier to work with.
In a small dish, combine the 1/4 cup of sugar and 2 teaspoons of cinnamon. Sprinkle half of the mixture across the dough in the pan. Add on a thin layer of marshmallow chunks mixed with chocolate chips.
Once the remaining dough has cooled, flatten it out into pieces and place across the chocolate and marshmallows. Try to cover the entire surface with cookie dough. Sprinkle the rest of the sugar mixture on top of the cookie dough.
Bake for 30 minutes, or until edges are golden. Cool completely and remove the bars from the pan using the parchment paper as a guide. Cut into squares.
