Chai Tea Marshmallows

I loved my lavender marshmallows so much, that I wanted to experiment some more. I decided chai tea marshmallows would be the way to go. To make these, take 3 chai tea bags and brew to make concentrated tea. Instead of using water in a regular marshmallow recipe use the tea liquid and all the sudden you have an impressive gourmet dessert.

By adding tea to the marshmallows you're adding a reddish brown color that will show through at the end. This recipe makes the softest, fluffiest marshmallows.

Recipe

Makes: 40 marshmallows Time: 20 minutes


Ingredients

  • 3/4 cup boiling water

  • 3 bags chai tea

  • 2 packets (4 1/2 teaspoons) unflavored powdered gelatin

  • 3/4 cup sugar

  • 1/2 cup light corn syrup

  • pinch sea salt

  • 1/2 cup powdered sugar

  • 1 tbsp corn starch

  • 2 tsp cinnamon

Directions

  1. Place the tea bags into the boiling water and let brew for 10 minutes. Take 1/4 cup of the mixture and place in the freezer to cool. Once cooled poor into a standing mixer and add the gelatin. Take another 1/4 cup of tea and place it in a small-medium size pot.

  2. Add sugar, 1/4 cup light corn syrup and salt to pot with tea and bring to a boil. Stirring occasionally, cook the mixture until it reaches 240 F.

  3. Meanwhile, take remaining 1/4 cup corn syrup and mix with the gelatin in the mixer. Beat on low, then slowly add the hot syrup once it reaches 240 F. Increase speed to medium and beat for 5 more minutes, then to high and beat for 2 more minutes.

  4. Transfer sticky white batter to an 8 by 8 pan coated with nonstick spray (make sure to wipe away excess spray). Let dry for at least 6 hours, preferably overnight.

  5. Mix together the powdered sugar, corn starch and cinnamon and spread on a cutting board. Take marshmallows out of the pan and place on the cutting board. Use a knife coated with nonstick sprayed covered in powdered sugar mixture to get a nice looking finish.

  6. Coat the marshmallow in the powdered sugar mixture to remove stickiness.
