Chocolate Chip Banana Cookies

Sometimes I find that I'm stuck with 1 or 2 bananas that have become too ripe to eat. Usually I'd think banana bread, but I wanted to try a cookie version. I only had one banana so I halved this recipe, but the one tricky thing about this is getting half an egg. I just do my best and it usually turns out fine :)

This cookie has a banana base (upper left) of 1-2 ripe bananas, mashed with brown sugar. Then this will get mixed in with all the other wet ingredients (upper right).

Slowly mix in all the dry ingredients (lower left) then add in the oats and chocolate chips (lower right).

These cookies turn out super soft and light and make the perfect snack for any time of day.


 

Recipe

Makes: 26 cookies Time: 30 minutes


Ingredients

  • 3/4 cup butter softened

  • 1/2 cup granulated sugar

  • 1/2 cup light brown sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 2 ripe bananas mashed

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1 cup old-fashioned oats

  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350 F and line a baking sheet with parchment paper or a baking mat.

  2. Mix 1/4 cup brown sugar with the mashed bananas and stir until combined.

  3. In another bowl, cream butter, sugar and remaining 1/4 cup brown sugar.

  4. Mix in egg and vanilla and stir until combined.

  5. Next stir in bananas and mix together.

  6. Slowly add the flour, baking soda, salt, and cinnamon to the dough and incorporate.

  7. Fold in oatmeal and chocolate chips until just combined.

  8. Scoop cookie dough onto baking sheet and place dough 2 inches apart. Bake for 11-12 minutes, or until the bottoms are golden brown. The cookies may seem soft, but that's just from the bananas.

  9. Allow to cool on pan for 2 minutes and then remove to cooling rack.
