There are thousands of recipes out there for chocolate chip cookies, but this is, what I believe, the perfect chocolate chip cookie. It's crispy and chewy and the added mini marshmallows add extra carmalized goodness to each cookie.

I like to bake these cookies on a silpat because the marshmallows can be extra stickey and sometimes holes appear where the marshmallows were.

Recipe
Makes: 30 cookies Time: 15 minutes
Ingredients
1 cup (2 sticks) butter softened or melted
3/4 cup sugar
3/4 cup brown sugar
2 tsp vanilla
2 large eggs
1 3/4 cups flour
1/4 cup almond flour (optional)
1 tsp baking soda
1 tsp salt
2 cups chocolate chips
1 cup mini marshmallows (optional)
Directions
Preheat oven to 375 F.
Beat the butter, sugars, and vanilla in a bowl, then add in the eggs. Sift together the flour, baking soda, salt, and almond flour (optional). Mix it in with the batter and beat until well combined.
Stir in the chocolate chips and marshmallows (optional).
Use a tablespoon ice cream scoop to create balls of dough and place them on a baking sheet 2 inches apart.
Bake for 10-12 minutes, until the surface is golden brown.
