Flourless Chocolate Cookies with Freeze Dried Raspberries

These cookies are so decadent and fudgy! They rely on so much powdered sugar to compensate for the lack of flour. You can add anything to these, but I decided to go with freeze dried raspberries. I bought them from Trader Joe's and you can also buy them on Amazon!

The recipe is so simple to make and only takes 6 ingredients. Mix everything together and then refrigerate the cookies for 30 minutes before baking.

They're done when the surface of the cookie has started to crack slightly.


 

Recipe

Makes: 24 cookies Time: 20 minutes


Ingredients

  • 1 cup powdered sugar

  • 3.5 Tbsp cocoa powder

  • Dash of salt

  • 1 large egg white

  • 1 tsp vanilla

  • 1/2 cup chocolate chips

  • 1/2 cup freeze dried raspberries

Directions

  1. Whisk cocoa powder, powdered sugar, and salt together in a large bowl. Add the egg whites and vanilla and stir to combine with a silicone spatula. The batter will get very thick and require some muscle to stir.

  2. Fold in the chocolate chips and freeze dried raspberries.

  3. Scoop onto a parchment or silicon mat lined baking sheet.

  4. Chill cookies on baking sheet for 30 minutes before baking. This will result in a better shaped cookie.
