These cookies are so decadent and fudgy! They rely on so much powdered sugar to compensate for the lack of flour. You can add anything to these, but I decided to go with freeze dried raspberries. I bought them from Trader Joe's and you can also buy them on Amazon!
The recipe is so simple to make and only takes 6 ingredients. Mix everything together and then refrigerate the cookies for 30 minutes before baking.
They're done when the surface of the cookie has started to crack slightly.
Recipe
Makes: 24 cookies Time: 20 minutes
Ingredients
1 cup powdered sugar
3.5 Tbsp cocoa powder
Dash of salt
1 large egg white
1 tsp vanilla
1/2 cup chocolate chips
1/2 cup freeze dried raspberries
Directions
Whisk cocoa powder, powdered sugar, and salt together in a large bowl. Add the egg whites and vanilla and stir to combine with a silicone spatula. The batter will get very thick and require some muscle to stir.
Fold in the chocolate chips and freeze dried raspberries.
Scoop onto a parchment or silicon mat lined baking sheet.
Chill cookies on baking sheet for 30 minutes before baking. This will result in a better shaped cookie.
