Lavender Hot Chocolate Cookies


I wanted to make some decadent hot chocolate cookies, but wanted to spice it up by using lavender marshmallows. It really classes up these cookies and gives them a nice and light floral taste. If you don't want to make your own lavender marshmallows you can just use regular ones. 








The first step to create these cookies is to make the chocolate and butter mixture. When it's finished it should look something like this.













After it's cooled mixed it into a batter of eggs, brown sugar, and vanilla then add in the baking powder, flour and salt. This batter will be very wet so it needs to be refrigerated for 2 hours. After my batter was cooled it looked like this.








After 10 minutes of baking, place half a marshmallow on top of each cookie like this.

Wait 5 more minutes and the marshmallow will melt into the cookie.

Place the cookies on a wire rack to cool. 

These cookies are as delicious and goey as they look!

You can add purple sprinkles or dried lavender to the tops of marshmallows to promote the lavender aesthetic.


 

Recipe

Makes: 24 cookies                    Time: 30 minutes + 2 hours to chill


Ingredients

  • 1/2 cup butter

  • 12 oz chocolate chips

  • 1/4 tsp salt

  • 1/4 cup cocoa powder

  • 1 3/4 cups flour

  • 1 1/4 cups brown sugar

  • 1 1/2 tsp baking powder

  • 3 eggs

  • 1 tsp vanilla extract

  • 12 lavender marshmallows​ halved

Directions

  1. Melt the butter and chocolate chips in a saucepan over medium heat. Stir until combined and let cool for 15 minutes.

  2. Mix the eggs, brown sugar and vanilla in a bowl. Once the chocolate mixture is cool, add it to the egg mixture and mix until combined. 

  3. Add in the cocoa powder, flour and baking powder. At this point the batter will be very moist, like brownie batter.

  4. Refrigerate for 2 hours, or until batter is firm.

  5. Use a 1 tbsp ice cream scoop to ball the cookie dough. Place on a baking sheet with a silicone mat or wax paper. 

  6. Bake 10 minutes, or until cookies start to crack. Remove from the oven and place half a marshmallow on top of each cookie (you can place a few chocolate chips underneath the marshmallow if desired) 

  7. Bake 4 more minutes and enjoy :)
